Dining at Hacienda Huayoccari allows visitors to enjoy the hospitality of a traditional Peruvian family. A member of the family greets each guest, no matter the size of the group. Authentic home-cooked Peruvian food awaits, whether in the private dining room with colonial carvings on its walls, or in the grand salon, decorated with colonial glazed ceramic vessels from floor to ceiling. Each room has large windows that face the garden and offer a privileged view of Urquillos and the Sacred Valley.
Comforts of home
Each group is offered a buffet in a separate area of the home or hosted in the room reserved for small groups. Buffet items are served in simple dishes, hot foods are kept warm in chafing dishes, and salads feature bright vegetables from the garden. “It is home-cooked food like your grandmother would make,” explains Ana María Barberis, who designed the menu on the basis of family dishes with her mother-in-law, María Cristina Orihuela de Lámbarri. The simplicity of the Peruvian delicacies is deceiving, since many dishes take hours to prepare following unique recipes. Home-cooked food such as this is difficult to find. Classic Peruvian dishes are on offer such as causa (cold potato casserole) with trout and tuna, ají de gallina (chicken stew), and lomo saltado (stir-fried beef). But there are also more local dishes such as sara lawa (Andean cream of corn) or tender pork chops with fava-bean stew. Dishes such as chicken rolls in sauco berry sauce or steamed trout in caper sauce allow visitors to experience unique local flavors. The final touch is dessert, with a selection of traditional sweets including the volador, cherimoya merengue, and cheesecake with home-grown sauco berry sauce. Dessert is accompanied with herbal tea or home-brewed Peruvian coffee. From the beginning to the end, visitors experience a home-style meal. The fireplace is lit at night to warm the atmosphere.
