Fresh and local

The Incas worked these lands with knowledge and skill until they were able to produce the tender giant white corn, which later on reached the farthest corners of the world thanks to the efforts of the Lambarri Orihuela family. Here we can enjoy the fruits of this devotion to agriculture: the potatoes, avocados and vegetables, the eggs and of course the corn served at Hacienda Huayoccari are grown in the estate. Other vegetables are purchased from neighbour farmers. Meat comes from Cusco and fresh bread is brought each morning from Calca, where the best traditional bread in the Sacred Valley is baked. Each meal ends with an infusion from the herb garden or a cup of Cusco coffee. Here, it makes sense to use local ingredients; agriculture has been at the centre of life at Hacienda Huayoccari for centuries. To dine here is to partake in this agricultural heritage, to taste the unparalelled flavour of the fruits that have grown in these ancient lands, under this mythical sun.
